Spring Rolls are a popular Chinese Snacks. These Rolls are filled with flavourful mixed vegetables and deep fried. These crispy rolls can be prepared with different filling as per your desire. For example the Rolls can be filled with Spicy noodles/ mushroom or even paneer and alter spice according to taste. These Rolls can be made with homemade wraps or readymade frozen sheets, which are easily available in stores these days. These Rolls can be served as snacks as well as appetizer before meal. In this recipe I will showing mixed vegetables spring Rolls.

Ingredients
- Cabbage : 1 cup (shredded)
- Onion : 1 cup (thinly sliced)
- Capsicum : 1/2 cup (shredded)
- Carrot : 1 cup (shredded)
- Ginger : 2 TSP ( grated)
- Garlic: 2 TSP ( finely chopped)
- Soya sauce : 2tbsp
- Vinegar : 2tbsp
- Sugar : 1 pinch
- Pepper powder : 1tbsp
- Cornstarch : 2 tbsp
- Spring onion 1/4 cup
- Maida 1 tbsp (for slurry)
- Ready made sheet ; 12 no.
- Oil : 4tbsp + for deep frying
- Salt to taste.
Instructions

Heat oil in a pan. Once the oil is hot add grated ginger and finely chopped Garlic. Saute for 2 minutes.

Now add thinly sliced Onion, saute for a minute or two.

Now add shredded Capsicum and Carrot, saute for few more minutes.

Add shredded Cabbage and mix well.

Then add Soya sauce, Vinegar, Pepper powder, sugar,and salt to taste. Mix well.

In a small bowl mix cornflour and little water mix well with out lumps. This mixture is called cornstarch.

Add this cornstarch to the vegetable mixture and mix well. Do not allow the starch to settle at the bottom of the vessel.

Lastly add spring onions and mix well.

Allow the mixture to cool.

Meanwhile let’s prepare the slurry by mixing maida flour with a pinch of salt and little water mix well to form a thick paste.

Now place the spring Rolls sheet on a board. Apply the slurry gently on all sides of the sheet.

Fill the vegetable stuffing towards your side.

Roll it tightly closing the edges inward, by the end apply slurry if needed and seal it.

Repeat the sequence for all the Rolls.

Heat oil for frying once it’s hot fry the rolls on a medium flame till golden brown. Serve hot with your favourite dip.
Note: Do not skip adding sugar, it’s added to balance the taste.
