Delicious Broken Wheat Payasam is a healthy and an easy dessert to prepare. The combination of jaggery, Coconut milk, clove and a hint of Cardamom powder makes it Scrumptious. This dessert is commonly prepared in our household for almost all auspicious occasions. In this recipe I have added few more dry fruits other than cashews and raisins to enhance taste. It’s purely your choice to exclude or include any of these dry fruits.

Ingredients
- Broken Wheat : 1.5 Cup
- Jaggery : 2 Cups ( grated)
- Coconut Milk : 2 Cups ( extracted from freshly grated coconut)
- Cardamom Powder : 1 tbsp
- Cloves : 2 no
- Ghee : 2tbsp
- Cashews : 2tbsp
- Raisins : 2tbsp
- Almond : 1 tbsp (optional)
- Pistachio : 1tbsp ( optional)
- Dry Dates : 1/2 tbsp ( optional)
- Water : 3 cup
Instructions

Heat a pan add broken wheat saute on medium flame till it’s warm. Transfer it to a plate.

In a pressure pan add grated jaggery, water, broken wheat and cloves. Close the lid.

Cook on a medium flame till 4 – 6 whistles. Allow it to cool.

Now add Coconut milk. Bring it to boil.

Add cardamom powder, mix well.
- In another pan heat ghee and fry the dry fruits.
- Garnish them and serve hot. Enjoy the healthy dessert.
Note: As time passes broken wheat will absorb all the milk in the desert and becomes thick. So add warm milk to adjust the consistency and mix well before serving.
