Dhaniya bath as the name itself suggest that the core ingredient of this dish is Coriander leaves. This onepot dish is one of the most easiest way to prepare. This rice variety is similar to Pulav/Pulao but again ingredients vary. An ideal lunch box recipe which simply great with or without side dish. This can be served with raitha as well. This onepot Dhaniya bath is an aromatic, tasty spiced rice made with fresh Coriander leaves, Basmathi rice, spice and veggies of your choice. Here in this recipe I have kept it very simple by using minimal veggies like Onion, Peas, Sweetcorn.

Ingredients

  • Basmathi Rice : 2 cups
  • Green chillies:4no.
  • Ginger :2″
  • Coriander leaves : 1/2 bunch
  • Garlic : 8pods
  • Onion: 3 no.
  • Oil :3tbspn
  • Ghee :2tbspn
  • Bayleaf :2no.
  • Cinnamon : 2sticks
  • Cloves :3no.
  • Buds :3no.
  • Cardamon : 2 no.
  • Shahjeera : 1tsp
  • Turmericpowder : 1/2 tsp
  • Chilli powder : 1 tsp
  • Coriander powder: 1 tbsp
  • Peas : 1/2 cup
  • Sweet corn : 1/2 cup
  • salt to taste
  • Water : 4 cups
  • Coriander leaves : finely chopped for garnishing

Instructions

  1. Soak Basmathi rice for 20 min. Set aside.
  2. Grind green chillies ,ginger ,garlic, coriander leaves along with 1 roughly chopped onion to a smooth paste.
  3. Heat oil and ghee in a vessel.
  4. Add bay leaf, cinnamon stick, cloves, buds and shshjeera. Saute
  5. Add the remaing 2 onions thinly sliced. Fry till soft and tint.
  6. Add the ground masala for a minute or till raw smell goes.
  7. Now add turmeric powder, chilli powder and coriander powder. Mix well and saute.
  8. Add peas and sweetcorn and mix well.
  9. Add salt to taste and mix well.
  10. Strain excess water and add soaked rice mix well till masala coats the rice.
  11. Add 4 cups of boiling water.
  12. Sprinkle coriander leaves .
  13. Close the lid and cook for 15 – 20 minutes.
  14. Delicious dhaniya bath is ready. Serve hot with raitha.

Note: For the recipe I have used basmathi rice. but you can use even rice which is used daily . There are many varieties of rice recipes and this is one of them. In this recipe you can add any vegetable of your desire.  This rice taste good even without raitha.
